Bikini Recipe

Makes enough for 10 people

For the Citrus Syrup (produces 750ml)

300ml fresh clementine juice
200ml newly squeezed lemon juice
500g caster sugar

For the Cocktail (makes 850ml, to serve 10)

400ml premium vodka
100ml London dry gin
150ml peach-flavored liqueur
200ml citrus syrup (see above)
Fresh cranberries, to garnish
Mandarin essential oil, as a final touch

Directions

To prepare the Syrup: Place all the ingredients in a pan, bring to a gentle boil, mixing so the sugar melts. After that, take off the stove allowing it to cool down fully. Decant into a sealable bottle, close it and store in the refrigerator, it will last for about one month.

For the Cocktail Base: Pour all the liquids in a sizeable container, leave to sit for 60 minutes, then filter it preferably using a fine cloth, to ensure it's perfectly clear.

When ready to serve: Measure 85ml of the premix into a cocktail shaker packed with ice, and agitate gently for about 60 seconds to cool it down. Strain into a cold coupe glass or equivalent, decorate with the cranberries and complete it using a quick spritz of mandarin oil above the glass.
